Thermally oxidized oil generates reactive oxygen species that have been implicated in several pathological processes including hypertension, fatty liver, cardiovascular disease. For Piper betel L. (PBL) studies, has been confirmed to have antioxidant, hepatoprotective effect. Study of effects of PBL on serum lipids, liver function & aorta in rats fed with thermally oxidized soybean oil/ high-cholesterol diets. Male Sprague-Dawley rats were divided into four groups and were fed with the following diets, respectively, for 10 weeks: basal diet (control); Unused soybean oil diet (FSO); Soybean oil repeatedly used in fring diet (FSO); FSO diet + Piper betle [50 mg/kg] (FSOL); FSO diet + Piper betle [100 mg/kg] (FSOH). After 10 weeks, the rats were sacrificed, and the aortic arches were dissected for morphometric and immunohistochemical analyses. So from the experiment we suggest that PBL can reduce LDL and cholesterol in the blood, reduce the total cholesterol and triglyceride in the liver and the accumulation of body fat. Although this experiment failed to observed that an immediate effect on betel leaf for serum lipids, liver function, and cardiovascular, still have the potential. So this experiment can be used as a reference basis for futures studies. Future will make the revision in view of the part experimental detail. For example, increases the thermally oxidized soybean oil to fry in oil the time, to choose fry in oil the things, adjustment feed proportion, increase experiment rats quantity. The revision will hope to have the more explicit result.
