在近幾來,許多國人懷有想要創業當老闆的念頭,而餐飲業是最受創業者喜愛的行業。但由於餐飲業競爭激烈,經營相當困難,所以較不容易創業成功。因此,本研究以北、中、南地區的餐飲業創業者作為研究對象,為了瞭解其人格特質、創業動機與創業成功,分析三者之間的關聯,比較不同性別、個人背景在人格特質、創業動機與創業成功上的差異性。本研究發現,餐飲業創業者: (1)具備某些獨特的人格特質。(2)最主要的創業動機為拉因因素。(3)非財務是其創業成功的主要衡量。(4)高經驗開放性與外向性、低神經質,是與創業動機之間有顯著相關 (5)高經驗開放性、外向性與嚴謹自律性、低神經質,是與創業成功之間有顯著相關。(6)高自我成就、低職場歧視,是與創業成功有顯著相關。(7)男、女性創業者在財務、經驗開放性、機會需求上有顯著差異。(8)人格特質僅有在學歷上有顯著差異。(9)創業動機在個人背景上有部分顯著差異。(10)創業成功在個人背景上無顯著差異。最後,將本研究的結論與建議,供後續研究、創業輔導機構,以及未來想從事餐飲創業者之參考。

In the last decade, a large number of people have had notions of being entrepreneurs and like to start food & beverage business. Nevertheless, the industry competes intensely and is hard to manage, so it is not easy to success. Consequently, this study chose food & beverage entrepreneurs in the north, middle and south Taiwan as the research’s subject. And the purpose of study is to understand their personality, motivation and success; to analyze the relationship between these three; and to compare whether they have differences in gender and individual background.
The findings indicate that the entrepreneurs had some typical personality; the primary motivations were full factors; the non-financial measures were as the critical measures of their success; high openness and extraversion, low neuroticism were closely linked to entrepreneurial motivation; high openness, extraversion and conscientiousness, low neuroticism were related to entrepreneurial success; high self-achievement, low work discrimination were related to entrepreneurial success. In addition, the study found the significant differences in financial measure, openness and opportunity demand among male and female entrepreneurs. Personality only had a difference in education. Entrepreneurial motivation had partial significant differences in individual background. But the entrepreneurial success was found no difference in individual background.
Finally, the results and suggestions were concluded to further research, enterprise guidance associations and people who intend to run food & beverage business in the future as references.
