許多品種花卉具有食、藥用價值,一些花卉含有微量元素、天然色素和香氣物質,具有改善食品外觀、增強食品風味和營養保健等功能。本研究分析有機栽種之蝶豆花(Clitoria ternatea)之花青素含量為190.7 mg/g 乾重,冷凍乾燥蝶豆花水萃物(100 mg/mL)之清除DPPH自由基能力為72.37%;其總酚類化合物含量為208.39±3.50 μg/mL GE,總類黃酮含量188.08±6.39 μg/mL QE。蝶豆花水萃取物或95%乙醇萃取物(20 mg/mL)均不具亞鐵離子螯合能力;且萃取液在5 mg/mL濃度下對S. typhimurium TA98及TA100菌株進行致突變性試驗,結果顯示不論有無添加大鼠肝臟抽出物S9均無致突變性。
Various edible flowers contain trace elements, natural pigments and aroma substances, could improve food appearance, enhance food flavor and nutrition, are potential for functional food. In this study, the content of anthocyanin in Clitoria ternatea was 190.7mg/g dry weight, and the DPPH free radical scavenging capacity of water extract (100 mg/mL) of frozen dried flower petal was 72.37%. The polyphenolic compounds and total flavonoids was 208.39 ± 3.50 μg/mL gallic acid equivalents and 88.08 ± 6.39 μg/mL quercetin equivalents. Whether water or ethanol extract (20 mg/mL) did not have ferrous ion chelating ability. There is no mutagenicity of flower extract (5 mg/mL) on Ames test of S. typhimurium TA98 and TA100 strains with or without the rat liver extract S9.
