臺灣博碩士論文加值系統

餐飲收入一直是國內觀光飯店的重要收益來源，而廚房設計之適用性更是影響餐飲營運表現的關鍵因素，因此在新建飯店廚房規劃時，如何兼具餐飲服務品質、效率與競爭力，成為飯店廚房設計專案經理人的重要挑戰。因此，本研究目的包括:1) 探討國內飯店廚房設計專案管理之內容；2) 發展飯店廚房設計專案管理之流程；及3) 建立飯店廚房設計專案管理之規範。為達研究目的，本研究採深度訪談法，以飯店廚房專案經理人為訪談對象，進行實證資料之收集與分析。研究結果歸納為以下部份：1)專案管理內容； 2)專案規劃； 3)專案資源組織；4)專案執行與進度管控； 5)專案結案與評估。研究資料將可提供飯店業者及廚房設計專案經理在規劃廚房設計及進行專案管理之重要參考，以提昇飯店廚房設計與工程專案管理之品質。

Food and beverage sales generate most revenue in tourist hotels in Taiwan. The usability of the kitchen design is critical to the success of the food and beverage operational performance. Thus, how to incorporate service quality, efficiency, and competitive strengths has long been a big challenge to all kitchen design project managers in the establishment of new hotel kitchen. Thus, the objectives of the study include: 1) to gain the understanding of the content of hotel kitchen design project management; 2) to develop the procedures of hotel kitchen design project management; 3) to establish the framework of hotel kitchen design project management. In-depth interview research method was used to collect empirical data for the study. Project managers who were engaged in hotel kitchen design were interviewed. The results of the study were summarized in the following parts: 1) the tasks of project management; 2) the planning of project management; 3) the organization of the project resources; 4) the execution and control of the project; 5) the evaluation of project performance. Research data provides useful information for the hotel management and kitchen design project managers to plan and develop kitchen design project management and to enhance the quality of hotel kitchen design project management.
