　　食衣住行為人類生活基本行為，其中又以「食」為首；廚房則為住宅
中反應食事的主要空間。而「行為」與「空間」為二個互相影響的因子：
其中使用行為若具有一定程度的普遍性，則空間與設施規劃之良窳，將直
接影響使用行為；使用行為的共同性，也影響空間及設施的規劃。　　本
研究即基於以上觀點，針對住宅廚房中，「行為」「廚具」與「空間」三
個互相影響的因素進行調查與分析，透過此一主題之探討，本研究擬達成
的目標有四：一、瞭解台灣地區住宅廚房之發展過程，及其發展過程的影
響因素。二、瞭解台灣地區住宅廚房空間，與內部設施之特性及問題。三
、瞭解使用者對現有廚房空間、設施之使用特性與意見。四、擬具廚房空
間現況問題之建議，與空間計畫之參考準則。　　本文共分為六章，其重
點如下：第一章　緒論－－研究動機及目的、研究範圍、研究方法及流程
。第二章　台灣地區住宅廚房空間發展之回顧－－探討台灣地區住宅類型
及與廚房型式演變之關係，並列舉國外廚房演變狀況以為比較。其次探討
影響廚房空間發展的各項因素。第三章　廚房內部設施與行為特性之分析
－－探討廚房內部的設施與使用行為之特性。依據第二章及第三章分別對
空間與內部設施、行為特性的探討，擬定台灣地區住宅廚房之研究課題。
第四章　台灣地區住宅廚房空間及使用現況之調查分析－－對台灣地區住
宅廚房進行實測訪問與問卷調查，並加以統計分析，以瞭解廚房空間、設
施，及使用現況與意見。第五章　台灣地區住宅廚房現況問題檢討－－綜
合第四章之調查結果加以檢討，並提出空間計畫之對策。第六章　結論與
建議－－台灣地區住宅廚房空間研究過程與結果之綜合建議。

"Behavior" and "space" are two factors which are inter-
influential: if usage behavior is universal, the quality of
space will influence usage behavior directly; and the comman
characteristics of usage behavior will also influence the
desing for space and facility. There are four goals for the
research through the study of this subject: 1.To understand the
development of the house kitchens facillities and its
influential factors in Taiwan area. 2.To understand the
characteristics and problems for the space and inner facilities
of house kitchens in Taiwan area. 3.To understand the users''''
opinions about the characteristics of usage for current house
kitchen and facilities. 4.To intend the suggestion on the
kitchen space and the rules for the space-planning.
