本研究乃在探討蓖麻油之各成份脂肪酸及利用添加castor oil 水解物進
行fed-batch 培養Sporobolomyces odorus時,對其生長及 tone 產生之
影響。結果顯示:(1)在三角瓶振盪培養過程中,ricinoleicacid 之添加
會降低 S .odorus 之生長,降低之程度隨著添加濃度之提高而增加,添
加palmitic acid、stearic acid、oleic acid 或 linoleic acid 均會
降低gamma-de- calactone之產量,然而ricinoleic acid之添加可提高
gamma-decalactone之產量,在接種時即添加 0.06 % ricinoleicacid
於培養液者,經 9天培養後可得最高之 gamma-decalactone 產量達
131.4 mg/L ,約為未添加脂肪酸者之40倍其相對含量亦由未添加脂肪酸
時之52.7%提高至98.0%。( 2)以發酵槽培養 S.odorus 時,培養液未控制
於一定 pH 值且通氣量為 1v vm時,gamma-decalactone 之產量較高,其
最高產量約 60.2 mg/L 出現於 5 天培養之後。(3) 在第3 天培養時再添
加castor oil水解物進行 fed-ba tch發酵時可得一較高 gamma-
decalactone 之產量,此產量達 163.7 mg/L出現於5 天之培養後。(4)在
第 3、4 及 5 天之培養時分別再添加castor oil水解物進行連續 fed-
batch 發酵時,能更進一步提高 gamma-decalac tone之產量至 208.0
mg/L,此出現於7 天之培養後。         

Fed-batch culture with the addition of castor oil and the
effects of the addition of fatty acid,components of ca- stor
oil,for the growth and production of gamma-decalactone by
Sporobolomyces odoruswere investigated in this study. Results
revealed that (1) Addition of ricinoleic acid reduced the
growth while increase the productionof gamma-decalactone by
odorus. The reduction of growth increased as the concentration
of added ricinoleic acid increased. After 9 days of shaking
flask cultivation,the highest yield of gamma-decalactone of
131.4 mg/L, about 40 times that in control broth,noted in broth
with added 0.06% ricinoleic acid at the beginning of the
cultivation.The relative percentage of gamma-decalactone to all
volatile flavor compounds increased from 52.7% in the control
broth to 98.0% in the broth with added ricinoleic acid. On the
other hand,addition of palmitic acid、stearic acid、oleic acid
or linoleic acid to broth all resulted in the reduced
production of gamma-decalactone by the test organism. (2) In
jar fermentor, the highest yield of gamma-decalactone of 60.2
mg/L was noted after 5 days of culti- vation in broth aerated
with an air flow rate of 1 vvm and with- out controlling the pH
of cultured broth during fermentation. (3) A higher yield of
gamma-decalctone of 163.7 mg/L was noted after 5 days of
cultivation when fed-batch culture was carried out by adding
castor oil hydrolysate to the broth on the 3rd day of cul-
tivation to compensate the ricinoleic acid consumed.
(4)Repeated- fed batch cultivation of S.odorus by adding castor
oil hydrolysat on third, fourth and fifth days of cultivation
resulted in a further increased yield of gamma-decalactone of
208.0 mg/L which was found after 7 days of cultivation.
