This study was to investigate the correlations among the food sanitation of the lunch-box and the workers'' food sanitation knowledge, attitude & practice, demographic data and self-management sanitation. This study chose sixty larger lunch- box plants in Kaohsiung area as the samples, each plants was sampled 2lunch-boxes, and gave a questionnaire about demographic data, food sanitationknowledge, attitude & practice to the workers and their manaagers. Each lunch-box plant filled in 5 questionnaires. We got 297 complete effective questionn-aires, including 58 from managers and 239 from workers. Thr rate of response was 99%. According to the SAS analyses, the average score for both the bossesand the employees of the food sanitation knowledge section was 82.2%. Secondlyon the attitude about food sanitation section the workers average score was 82.6%. Thirdl, the average score for the food sanitation practice section of the workers was 78.1%. According to the self-management sanitation inspectivesheet of the lunch-box plants we investigated the self-management sanitation and sampled 540 environmental samples including the workers'' hands and the outside parts of the mouth, the plates, the knives and cutting boards for theraw and ripe foods for the microbiological tests. We obtained the following seven analytical outcomes using SAS softwares.1.The total bacterium counts of the lunch-box products passed the reference standard (<10^5 c.f.u./g), using the t-test and logistic regression, and it''s correlated with workers'' food sanitation knowledge, attitude, practice and the self-management sanitation of the lunch-box plants(p<0.05).2.The total coliform bacterium of the lunch-box products passed the standard (<10 MPN/g), using the t-test, and it''s correlated woth workers'' food sanitation attitude and the self-management sanitation of the lunch-box plants(p<0.05).3.The workers'' demographic profile, including education level, age, whether they graduated from food related departments and whether they recevied regular health checks, has a correlation with the workers'' food sanitation knowledge, attitude, and practice using the Anova test, Scheffe''s test and t-test(p<0.05).4.The workers smoking habits are correlated with their food sanitation practice using the Anova test(p<0.05).5.The workers'' level of satisfaction with their current occupations and the reasons for their enagement in the jobs has a correlation with the workers'' food sanitation attitude by the Anova test(p<0.05).6. The workers'' food sanitation knowledge, attitude, practice and the self management sanitation of the lunch-box plants are correlated woth one another using the Pearson-correlation test and mutiple logistic regression(p<0.05).7.The self-management sanitation of the lunch-box plants, has correlation with both the total bacterium counts and the total coliform counts of the workers'' sanitation, kitchen utensils and dinner sets using regression analysis(p<0.05). From the above research, I''d like to suggest that the health units strengthen the health education for those who are older and have a lower education level. The lunch-box plants should take steps to improve the production lines such asseparting the raw from the ripe cooking areas to avoid cross contamination; Moreover, to enhance the workers'' cooking sanitation, they should avoid mixeduse of the raw and ripe knives and cutting boards. This will help maintain the foodsanitation of the lunch-box foods and ensure the health of our citizens.
