ABSTRACTBy applying the property of near-infrared absorbed by different substances, an instrument for measuring gravity and fat of raw bovine milk had been developed in this study; the significant wavelengths used in the instrument were provided by the literature. Using the instrument to measure the fat and gravity of raw bovine milk which came from Chunghsing pasture and Tunghai Milk Factory, the results showed that:To the fat of milk: The correlation coefficient of the regression equation was 0.97 and SEC was 0.263%. Using this equation to estimate the fat for another group of milk, its correlation coefficient was 0.99 and its SEP was 0.3%.To the gravity of milk: The correlation coefficient of the regression equation was 0.96 and SEC was 0.00158. Similarly, using this equation to estimate the gravity for another group of milk, its correlation coefficient was 0.95 and its SEP was 0.00169. The approach proposed by this study was shown to be worked with quite cheap price. The objective of this study had been reached. In regard to the accuracy of the instrument, more work needs to be done. However, by keeping improving the accuracy of each part of the instrument, we believe that the instrument will be more practical.
