Lipase synthesis was shown to be induced by olive oil and repressed when the products of olive oil hydrolysis (oleic acids) accumulate in the medium. A balance between these two antagonistic effects was obtained in a fed-batch cultivation with pulsed feeding of olive oil. Lipase production ceased when the activity reached approximately 56U/ml due to a nitrogen- source shortage. A continuous supply of olive oil and concentrated LB medium allowed the lipase production to continue to 110U/ml.
