人體內隨時都在產生自由基,相對的有抗氧化物消除自由基,以維持平衡,避免氧化壓力的發生。在高強度運動中,如跆拳道訓練,因為耗氧量增加,導致自由基大量增加,而抗氧化物無力清除。透過適當的抗氧化物增補,如檢驗乳漿蛋白,是否讓體內有足夠的抗氧化物,清除過多的自由基,減少氧化壓力的發生。本研究目的在探討四週乳漿蛋白對跆拳道訓練誘發之氧化壓力與抗氧化能力的影響。本研究以24位跆拳道選手為受試對象,以體重兩兩配對,分為實驗組與控制組,實驗組增補乳漿蛋白濃縮物,控制組則未增補,進行四週增補實驗。分別在增補前、後抽血20 c.c.,利用流式細胞儀(Flow Cytometry)與酵素免疫吸附分析儀(ELISA reader)進行血液分析,分析受試者在增補前、後,白血球內超氧陰離子、過氧化氫、一氧化氮、榖胱甘肽及血漿中總抗氧化能力濃度變化,比較增補前、後跆拳道訓練誘發之氧化壓力與抗氧化能力的影響。結果發現,超氧陰離子濃度在控制組後測有明顯上升的趨勢,而實驗組則無顯著變化。過氧化氫濃度在控制組中有明顯上升的趨勢 (p < .05),而實驗組則有明顯下降的變化。而一氧化氮濃度在控制組中,也有明顯上升 (p < .05)的現象發生,實驗組則無明顯變化情形發生。至於榖胱甘肽濃度,控制組有明顯下降的變化出現,而實驗組卻有大幅增加的情形發生 (p < .05)。另外,血漿中的總抗氧化能力,則是在實驗組中發現有顯著增加的現象 (p <.05),而控制組則無明顯變化的情形發生。本研究結論:四週乳漿蛋白增補能有效增加受試者本身體內的抗氧化能力,降低跆拳道訓練誘發之氧化壓力,使踢擊表現不會因受到氧化壓力影響而下降,但無法有效提昇踢擊動力與肌肉質量。
In the human body, free radicals production and antioxidants clearance are balanced to each other every time. High intensity exercises, like Tae Kwon-Do training, need so much more oxygen consumption that the production of free radicals is increasingly more in which antioxidants can not clear them all. Dietary supplementation of antioxidants, like whey Protein, may bring enough antioxidants to clear free radicals and avoid oxidative stress produced in the body. The purpose of this study was to investigate the effects of supplementation with whey protein donor for four weeks on the oxidative stress and antioxidant potential induced by Tae Kwon Do training. Twenty-four Tae Kwon Do players were participated; and their body weights were paired as experiment and control groups in this study. The experiment group was supplemented with whey protein and the control group was untreated. The blood samples were collected before and after the time of supplementation. Total antioxidant potential (TAP) was analyzed by ELISA reader ; meanwhile, the concentrations of superoxide (O2‧–), hydrogen peroxide (H2O2), nitric oxide (NO‧) and glutathione (GSH) were measured by the flow cytometry.
  Results indicated that the concentrations of superoxide were significantly increased in the control group. The concentrations of hydrogen peroxide were significantly increased in the control group, but significantly decreased in the experiment group. The concentrations of nitric oxide were significantly increased in the control group. The concentrations of glutathione were significantly increased in the experiment group, but significantly decreased in the control group. Total antioxidant potentials were significantly increased in the experiment group.
  In conclusion, we had found that supplementation with whey protein donor for four weeks leading to increase the antioxidant potential of participators and decrease oxidative stress induced by Tae Kwon Do training; and its effects on Tae Kwon Do Athletes’ kick performance were not decreased under such induced oxidative stress. It is unable effectively to promote to kick power and muscle quality
