桑葉為一種傳統之中藥,於古代就已有將其用為醫用之紀錄,是一種富含多種生理活性成分之中草藥,其機能性成分包括了γ-胺基丁酸 (γ- aminobutyric acid, GABA )、生物鹼、1-脫氧野尻霉素( 1- deoxynojirimycin, DNJ )、酚類與類黃酮類等成分,近期又以GABA最受到各界矚目。因此,本研究之目的為以桑葉作為原料,並加入如山楂、天麻與刺五加等中藥,應用產學合作方式,建立出具功能性桑葉產品之標準化生產流程,藉由有氧-無氧發酵交互作用後製成多種成品。之後針對經有氧-無氧發酵後生成之高機能性成分含量之各項保健產品,檢測其主要機能性成分含量、類超氧歧化�“磻謈〝吽B血管收縮素轉換酵素之抑制活性、抗氧化能力之評估以及感官品評與儲藏性試驗以評估其功能性。實驗中利用工業用大量生產儀器進行三種不同之有氧無氧發酵交互作用條件進行測試,發現所製成之產品,以第二次試製之二次有無氧交互作用成品效果為佳,單方茶包、複方茶包、單方飲品與複方飲品以及單方與複方膠囊之GABA含量分別為 2.97、2.89、9.58、9.29、6.37與6.15 mg/g;血管收縮素抑制活性表現各自為10.43、11.86、73.42、70.81、55.42、53.17%;抗氧化能力表現上,於DPPH清除力與ABTS+•自由基清除能力則各自有良好之表現;且於為期半年之儲藏性試驗中,所有機能性成分均無顯著性之變化;於嗜好性感官品評成果,分數皆屬於可受消費者接受之範圍。綜合以上結果,本實驗建立了富含高機能性成分之桑葉飲品之製程,並分析其機能性成分含量,證實所製成之桑葉產品具有良好之功效,可有效提升桑葉之價值,並對健康食品之研發作為參考,使消費者方便在多元化保健市場中獲得具功效之保健食品。
