甘藷在台灣是很重要的根莖類作物之一,品種非常多元,有葉用、鮮食塊根、飼料用及觀賞用等。而西蒙一號甘藷是具有良好的藥理特性和抗氧化性質,但是栽培研究甚少,本研究主要目的是探討西蒙一號甘藷不同期作、採收時間及採後儲藏之品質及抗氧化能力。本研究分成三部分:(一)甘藷西蒙一號全株不同期作之品質及抗氧化能力。(二)甘藷西蒙一號全株不同採收月份之品質與抗氧化能力。(三)甘藷西蒙一號葉片及塊根不同採後儲藏期之品質及抗氧化能力。

第一部分針對甘藷西蒙一號不同期作相同栽種條件下其收穫品質及抗氧化能力。總產量的部分,秋作高於夏作。作物組織水分含量則不受到栽培季節的影響。光合作用色素包含葉綠素、葉黃素及類胡蘿蔔素;葉綠素和葉黃素含量秋作高於夏作。類胡蘿蔔素則是夏作高於秋作。抗氧化能力及物質包含:總酚、類黃酮、維他命C、抗DPPH自由基能力及超氧岐化酵素(SOD),其中總酚、類黃酮、維他命C及SOD含量皆是秋作高於夏作。而抗DPPH自由基能力的部分,則是夏作高於秋作。乾物質累積部分,澱粉含量是秋作高於夏作。整體而言,品質與抗氧化能力是秋作高於夏作。

第二部分針對甘藷西蒙一號秋作期間不同採收月份比較其收穫品質及抗氧化能力。作物組織水分含量則不受到採收時間的影響。光合色素部分,葉綠素和葉黃素生長至第180天含量最高,類胡蘿蔔素則是生長至270天含量最高。抗氧化部分,總酚、總類黃酮及SOD生長至第八個月含量最高。維他命C則是生長至180天含量最高。抗DPPH自由基能力生長至第270天能力最佳。乾物質累積部分,澱粉則是生長至240天含量最高。整理而言,秋作期間栽種至180天、210天及240天收穫其品質穩定且佳。

第三部分針對甘藷西蒙一號秋作期間葉片及塊根不同採收時間皆儲藏120天後比較品質及抗氧化穩定度。甘藷葉片及塊根水分含量整體而言比較不容易受儲藏天數多寡之影響。甘藷葉片光合色素部分,葉綠素、葉黃素及類胡蘿蔔素其儲藏品質皆為儲藏30天為最佳,而60天、90天及120天則含量遞減。甘藷塊根光合色素部分,葉黃素及類胡蘿蔔素其儲藏品質皆為儲藏30天為最佳,而60天、90天及120天則含量遞減。抗氧化部分,甘藷葉片及塊根總酚、類黃酮、維他命C、抗DPPH自由基能力及SOD含量其儲藏品質皆為儲藏30天為最佳。而乾物質累積部分,澱粉為儲藏30天為最佳,而60天、90天及120天則含量遞減。整體而言,儲藏30天的品質最佳,抗氧化物質及能力也最佳,因此不宜儲藏過久。
