台灣冬季鳳梨果實偏酸,品質不佳。本研究之目的為探討採前利用透明PE套袋、鈣、離層酸、水楊酸、油菜內酯、茉莉酸甲酯等藥劑和透明PE布覆蓋等處理,對降低‘台農17號’冬果鳳梨酸度和提高糖酸比之效果,期望達到周年生產之目的。2011年1月下旬至3月在屏東地區利用透明PE套袋處理可有效降低可滴定酸含量,提高糖酸比,但透明PE布覆蓋效果不佳。同時期在嘉義地區以透明PE布覆蓋處理,晚採者酸度較低,顯示較長時間覆蓋效果較佳。2012年1月下旬至3月採前透明PE袋套袋處理亦能有效降低可滴定酸含量和提高糖酸比,但是冠芽和果實易發生熱害;透明PE布覆蓋亦具有效果,效果雖不及套袋者,但是冠芽不易發生熱害。2013年1月下旬至3月再度進行以透明PE布覆蓋處理,屏東地區僅在3月下旬能有效降低可滴定酸含量,因冬季溫度偏高,屏東和嘉義地區1、2月透明PE布覆蓋處理之可滴定酸試驗結果不顯著。顯示透明PE布覆蓋時間的長短會影響可滴定酸含量和糖酸比高低。以上結果顯示,PE套袋處理和透明PE布覆蓋能提高袋內溫度並有效降低可滴定酸含量和提高糖酸比,此具有實用價值。
Generally, the problem of pineapple grown during winter season in Taiwan was more acid leading to low edible quality. Thus, in our current study, we used several methods, such as bagging, Calcium, Abscisic acid (ABA), Salicylic acid (SA), Brassinolide (BR) and Methyle Jasmonate (MeJA) and PE covering on ‘TN 17’ pineapple in the field during winter season to reduce its acidity and enhance sugar-acid ratio (TSS/TA), and to reach high quality of pineapple production in winter. It was found that polythenepolyethylene (PE) bag bagging can reduce titratable acid and enhance TSS/TA; however, it was not significant when pineapple was covered with flat PE sheet in late January to March in Pingtung in 2011. Interestingly, same treatment was applied in Chiayi, when pineapple was covered with flat PE sheet, the late harvest pineapple showed low titratable acid than earlier harvested which indicated that long time cover of PE is better than short term in Chiayi.
In addition, there is no effect to reduce titratable acid, total soluble solids, and TSS/TA when preharvest using Ca, ABA, SA, BR and MeJA. When pineapple was PE bagging repeatedly in late January to March 2012 similar result was found that this method could reduce titratable acid and increase TSS/TA ratio, but hot injury of crown and fruit was observed. Besides, pineapple covered with flat PE sheet may present low TA and high TSS/TA quality but not effectively when compared to PE bagging. However, there was no hot injury of crown when using PE covering.When pineapple was covered with flat PE sheet in late January to March in Pingtung in 2013, the significant low TA was found. The temperature was high in this winter; therefore, pineapple harvested in January and February both in Pingtung and Chiayi area shown no significant difference in TA content when covered with flat PE sheet , but it was significant difference in late March in Pingtung. As the result
covering time could affect TA concent and TSS/TA ratio. It is shown that PE treatment (bagging/covering) can enhance inside temperature under covering; therefore, pineapple grown in winter season covered with PE may significantly reduce TA and enhance TSS/TA ratio.
