台灣是多元族群的國家，具有多元文化的特色。有感於近年泰雅族飲食文化正慢慢地流失，身為泰雅族的我有責任負起飲食文化保留的傳承，因此進行本研究。台灣原住民族有16個族群，每個群族的文化各不相同。本研究以新竹縣尖石鄉泰雅族飲食文化為研究對象，採用質性研究觀點以文獻回顧法及深入訪談法加以整理探究，並透過相關文獻回顧進行研究與實證之用途。在訪談耆老及收集文獻的過程中，發現泰雅族傳統文化的體驗及泰雅族飲食文化中的基本特質包括就地取材食材新鮮及料理養生具生態環保價值。此外，研究中也發現泰雅傳統飲食具高度創意潛力，因此探討泰雅傳統美食對尖石鄉地區的觀光遊憩成為本研究的主軸。本研究以在地觀點深入探討紀錄尖石鄉泰雅族傳統飲食文化內涵以利文化傳承、以遊客觀點，了解泰雅傳統文化美食給遊客的感受，以利在地觀光發展以紀錄保存泰雅族部落飲食文化所蘊含的豐富自然資源及文化資源、以提升在地的文化發展與深度旅遊，引導大眾能體驗正確深入了解泰雅族文化，並親身至部落體驗及品嚐泰雅族傳統料理，在收集、調查、探究在地食材及傳統料理文化內涵與傳統民俗概況及如何帶動當地觀光的相關效益。本研究根據研究結果提出相關建議，可供相關單位發展原住民族部落在地飲食文化與觀光遊憩之參考。

Taiwan is a multicultural nation with 16 indigenous tribes each with their own distinct cultures. In recent years, the food culture of the Atayal has been disappearing. We hope through this research to pass down and create new indigenous food cultures. The subject of this study is an exploration of Atayal food culture research in Hsinchu’s Jianshi Township using qualitative research methods, literature review, and in-depth interviews. We have conducted research and found empirical evidence through review of the related literature. In interviewing elders and collecting documents, we discovered that the essential qualities of traditional Atayal cultural experience and food culture include the following: healthy cuisine using local ingredients which are fresh and environmentally friendly. In addition, this research found that there is great value for village tourism in the traditional Atayal food culture, therefore an exploration of tourism and recreation in Jianshi Township area traditional Atayal food culture became the primary focus of this research.
This study engages in deep exploration of local sights to record the meaning of Jianshi Township traditional Atayal food culture in order to aid in cultural continuation. Through collection of records and interview surveys, we explore and analyze local ingredients, the cultural significance of traditional cooking, the general state of traditional customs, and how to drive related local tourism in beneficial ways. From a tourism perspective, reseacher wants to understand how tourists feel about traditional food culture in order to develop local tourism. At the same time, reseacher hopes to record and preserve the abundant natural and cultural resources contained within Atayal tribal food culture in order to increase local cultural development and in-depth travel. This will guide more people to experience accurate and deep understanding of Atayal culture, personally going to villages to experience and taste Atayal traditional cuisine. This study proposes suggestions based on the research results and can provide these results to relevant institutions for reference in developing indigenousal tribe local food culture and tourism.
