餐飲從業人員一直以來是產業中入門檻最低,薪資較為弱勢的族群,隨著時代的變遷、休閒概念的普及,餐飲從業人員的休閒參與已逐漸提升。而餐飲從業人員的休閒活動參與一直以來不受到社會的重視,加上又是低薪的弱勢族群,造成休閒活動參與上有很多的阻礙,直接影響餐飲從業人員休閒活動參與的狀況,本研究通過質性研究之深度訪談,進而提出改善建議。本研究主要探討餐飲業從業人員休閒參與及休閒阻礙之探討,期望能提升餐飲從業人員休閒活動並多元化,提供政府及餐飲產業在規劃從業人員休假參與休閒活動的適宜性。研究結果發現,餐飲從業人員參與的休閒活動所獲得的休閒效益分為六項休閒效益:一、生理效益;二、社交效益;三、放鬆效益;四、教育效益;五、心理效益;六、美學效益。然而美學效益的獲益是最少,且結構性阻礙是個體對休閒活動的喜好與參與造成影響的最大因素,如工作單位。本研究最後提出實務建議給政府勞工相關單位及餐飲業負責人,以降低餐飲業從業人員參與休閒活動之阻礙及提升休閒活動參與及工作效能。
The employees of food service industry with relatively weak wages have always been the lowest entry in the industry. With the changes of the times and the popularization of leisure concepts, the leisure participation of employees in food service industry has gradually improved. However, the leisure participation of food service employees has not been valued by the society. They are the low-paying vulnerable groups, and there are many existing constraints, to stop them from participating in the leisure activities. This study adopts qualitative research method to conduct in-depth interview to explore their leisure participation and what constraints, to their participation, and provide suggestions to government and food service industry. The results reveal that there are six leisure benefits would be acquired, physiological benefit, social benefit, relaxation benefits, educational benefits, psychological benefits, and aesthetic benefits. However, the aesthetic benefits are minimal, and the structural obstacles are the biggest factors affecting the individual's preferences and participation in leisure activities, such as their jobs. Finally, the practical suggestions are addressed and provided to government and food service industry.
