現代社會中,人們的飲食文化、習慣除受西化影響外,加工食品亦隨時代演進,逐漸與人們脫離不了關係。自古以解決飢餓目的漸轉為追求美味、創造新穎的食品供消費者挑選,再次指出加工食品對於現代社會的關聯性與不可或缺性。以往研究指出,中老年族群於營養均衡飲食上的調查、也有探討中老年族群於三高調查中,哪些食品可能具有風險或保護性、亦有文獻指出,中老年族群於自覺健康意識上所具有的特徵與性別差異,然而,中老年族群購買加工食品的相關研究卻未曾有深入探討。有鑑於此,本研究以飲食習慣、生活品質、購買習慣性等面項設計問卷,以質性研究探討中老年消費者購買加工食品的各種面向,並設定各項假說,如:由於現今社會的結構與以往傳統不同,中老年族群有許多仍在就職中,且因現代工作環境的改變,仍有相當忙碌且無法自我烹調食物的時候,意即朝九晚六,甚至因為工作關係而有加班的現象。因此購買即食產品可能為一個常態。因此,本研究假設於中老年族群中,特定職業類別可能有偏好的加工食品購買習慣。依據文獻,不同飲食習慣的族群所習慣購買的食物亦有區別,故本研究假設此情況應亦適用於中老年族群,在不同飲食習慣的相關聯下,購買的食品類別可能有所區別。研究結果得知,生活品質、自我認知與職業類別上,與其購買的加工食品有相當的關聯性。
Nowadays, we have faced the influence of westernization on the culture of food and habits. In addition, processed food has also been evolved over decades. For the past scenarios, food is for solving the hunger issue. And now, food is for healthy, luxury or even nobilities. Thousands of processed foods have been created in the purpose of delicious and novelty, which points out the relevance and indispensability of processed foods for modern society. Previous studies have illustrated that the survey of elderly people on a nutritionally balanced diet, and some of the foods that the middle-aged and elderly people in the three high surveys may be risky or protective, and some literature has pointed out that the elderly customers have conscious health awareness. Characteristics and gender differences. However, the relevant research on the purchase of processed food by the elderly groups has not been well-known. In this study, we have designed questionnaires based on consuming habits, quality of life, purchasing habits, with qualitative research to explore the various aspects of elderly consumers purchasing processed food, and set up several hypotheses. Further, we assume that buying ready-to-eat products may be the normal. Although there is no significant difference with the post-retirement health relationship, it should have fully shown the work type, category and Under different health consciousness, dietary relatives (i.e. eating time, dining place, etc.) should also be included. Therefore, this study assumes that among middle-aged and elderly people, certain occupational categories may have a preference for processed food buying habits. To be concluded, this study has shown that this situation should also apply to elderly people. Moreover, different dietary habits, the types of food purchased may be different. The results of the study show that the quality of life, self-awareness and occupational categories are closely related to the processed foods they purchase.
