目前關於菇蕈多醣體保健食品之調查研究不多且為響應產品創新開發趨勢,需了解其於臺灣市場之概況與民眾之認知與食用現況,故本研究目的即探討臺灣民眾的個人背景因素、菇蕈多醣體與保健食品的認知、菇蕈多醣體保健食品及保健食品的食用現況和菇蕈多醣體保健食品購買意願之間的關係為何。本研究利用網路google問卷進行調查,納入條件為年齡20歲以上,居住於臺灣能理解中文之成年人,共回收有效問卷354份,以SAS 9.0版進行統計分析,結果顯示,女性61.9%平常有食用保健食品顯著較多;有食用過菇蕈多醣體保健食品僅83人,顯著較多為41-50歲;有抽菸及已戒菸者;已婚者,選擇購買之金額以1000元以下居多 (67.2%),以親友推薦為主而食用;而無食用者之原因以表示不了解者佔半數以上 (59.4%)。
受訪者菇蕈多醣體與保健食品的認知測驗總平均得分為7.5±2.5分,各題答題平均正確率為62.7%,女性;從不抽菸;從不喝酒;有食用保健食品或菇蕈多醣體保健食品者認知程度顯著較高;自覺健康狀況不好及非常不好;有抽菸及已戒菸者其菇蕈多醣體保健食品購買意願計分顯著較高,購買意願各題項以受訪者回答普通同意佔多數,認知得分為菇蕈多醣體保健食品食用與否及其購買意願之顯著影響因素。本問卷研究發現,受訪民眾多半因不了解菇蕈多醣保健食品而無食用之,民眾若要選購及食用菇蕈多醣體保健食品,知識為其重要的影響因素。
At present few studies on the market research of mushroom polysaccharides healthy foods (MPHF) in Taiwan. Therefore, the market overview and demand status of MPHF should be investigated. Aim of this study was to understand the relationships between the personal background factors, usage, knowledge and purchase intention of MPHF and healthy foods (HF) of adults in Taiwan. It was designed as a convenient sampling and online gooogle questionnaire. Subjects were aged over 20 years Taiwanese. 354 valid questionnaires were returned. The SAS 9.0 was used for statistical analysis. Results showed that the 61.9% female used HF more than male. Only 83 subjects consume MPHF and significantly were 41-50 years old; smokers and quit smokers or who were married. 67.2% of consumers buy MPHF priced at less than $ 1,000 and the main reason for their choice was recommendation from relatives and friends. 59.4% of subjects did’t consume MPHF because they know nothing about it.
The overall correct rate of the knowledge questionnaire was 62.7% and the mean total knowledge score was 7.5±2.5. It was significantly higher in female; never smoking; never drinking or who take HF or MPHF. The purchase intention score was significantly higher in self-rated health-not good and very bad or the smokers and quit smokers. Each purchase intention score question was mostly answered neither agree or nor disagree by the participants. The knowledge score was the significant effect factor for the usage and the purchase intention of MPHF. In this study found that most of the participants did not take MPHF because they didn't understand them. Knowledge is an important effect factor if people will buy and take mushroom polysaccharides healthy foods.
