據104年10月經濟部統計處統計指出餐飲與零售業的成長幅度仍較其他產業突出。隨著國內餐飲風氣消費習慣的變更且國內葡萄酒的價格逐漸走向平價的趨勢,類似的酒類專賣店更是不斷興起,使得一般大眾皆能夠接受並進行葡萄酒之消費。對於餐飲業而言,供應鏈管理最重要的部分在於供應商管理。如何評選品質優良的酒品供應商做為長期合作夥伴,這是企業面臨的第一道重要的難題。
本研究首先參考歷史文獻的準則與屬性及專家問卷,建立酒品供應商評選指標及準則並歸納出各準則及屬性之間的權重值以作為日後餐飲業在評選供應商作業之決策依據。研究方法上,結合層級結構分析(Analytic Hierarchy Process, AHP)及蟻群系統建構一套有系統的供應商評選模式有效解決餐廳供應商評選的問題。
本研究實證以蓮潭會館酒品供應商(開元、信發、邦妮及公賣局)可看出葡萄酒供應商蟻群權重值以公賣局表現較佳,次為邦妮。公司整體若不考量環境因素而做決策,無論從準則構面或是指標構面而言,公賣局無疑是最佳供應商,然本研究考量整體環境因素的變遷仍是企業調整採購策略的考量重要因子,納入企業經理人採購策略及蟻群搜尋最佳平台,依策略的調整做出不同供應商的採購排序供決策者參考。
According to Ministry of Economic Affairs and Statistics Department statistics, indicate that the growth rate of other restaurants and retail industry still outstanding,in the catering industry, wine is the best table drinks. With the change in consumer habits domestic food culture, the trend of Domestic wine prices gradually towards parity.The public are able to accept and consume wine,those peoples who are interested in wine can be convenient and pleasant to taste.
For the food and beverage industry, the most important part of the supply chain management is the Supplier Management. How to choose good quality wine suppliers as long-term partners is a very important issue. We first study the historical documents and reference criteria, attributes which those expert questionnaire, and base that to established wine supplier selection indicators and criteria.
This study combined with Analytic Hierarchy Process, AHP and Ant System construction of a systematic supplier selection mode effectively to solve the problem of restaurant supplier issue.
