近年來台灣代謝症候群盛行率逐年成長,主要可歸因於大部分民眾蔬菜及水果普遍攝取不足。隨著智慧行動裝置流行,本實驗探討以智慧型手機之行動應用程式(mobile application, app)作為營養諮詢暨教育工具介入對改變一般人飲食習慣之成效。本研究募集38位受試者,試驗為期6週,受試者每天使用智慧型手機APP進行飲食及其他紀錄,且定期2週進行一次體位及血液測量,營養師每隔2日依據國人膳食營養素參考攝取量(DRIs)個別給予指導建議。結果發現腰圍、體脂肪率與肝功能指標(GOT、GPT)有正相關性,介入2週後GOT及血壓有明顯下降、介入6週後受試者腰圍顯著下降,而且隨著行動裝置使用紀錄率增加而其血液三酸甘油酯則降低。三大營養素之攝取雖無顯著變化,但是發現手機紀錄率較差者(手機記錄率≦77.5%)脂肪比例達4成,蛋白質比例、脂肪克數、油脂類份數、豆魚肉蛋類份數相較於一般組(77.5%≦手機記錄率<97.5%)顯著較高,且豆魚肉蛋類攝取與油脂類攝取有顯著正相關。隨著行動裝置使用紀錄率增加而其蔬菜量攝取份量增加,手機紀錄率較高(手機紀錄率≧99.5%)者蔬菜及水果攝取量較多,水果類份量與腰圍呈負相關、蔬菜類份量與收縮壓呈負相關。隨著行動裝置使用紀錄率增加而其乳製品攝取量增加。介入兩周後精製糖克數顯著下降5克。本試驗利用個人化雲端營養諮詢服務方式,個案即時性拍照記錄加上營養師給予即時性指導建議,可改善個案的飲食狀況(例如:油脂攝取、蔬菜及水果攝取量等)及體位數值(腰圍、血壓等),藉此可應用於預防慢性病的發生。

In recent years, the prevalence of metabolic syndrome (MS) is gradually increased in Taiwan. Vegetables and fruits intake of the MS group is generally inadequate. With wide-spread use of mobile devices, the purpose of this study was to explore the effect of using smartphone mobile application (App) as a tool on nutrition education. Thirty eight subjects were recruited and were told to use APP for daily dietary record for six weeks. During the study, nutritional consultation was intervened three times a week .Anthropometric data were collected every two weeks. The results showed waist and body fat had positive correlation with GOT and GPT. GOT and blood pressure were significantly reduced after two weeks. Waist was significantly reduced after six weeks. Frequency of APP usage had a negative correlation with TG. Although the intake portion of carbohydrate, protein and fat had no change.The results showed that the lower frequency of APP usage group (≦77.5%;PFA group) consumed higher fat(40%). PFA group consumed more fat,had higher ratio of protein,lipid and meat than moderate frequency of APP usage group(77.5% ≦recording rate≦ 97.5%, MFA group).The meat consumption was positively correlated with lipid intake. Frequency of APP usage had a positive correlation with the vegetable intake. Higher frequency of APP usage group (≥ 97.5%, HFA group) consumed more vegetables and fruits than other group. The amount of fruit intake had a negative correlation with waist. The amount of vegetable intake had a negative correlation with systolic blood pressure(SBP).The frequency of APP usage had a positive correlation with dairy intake. Sugar intake was significantly reduced five gram after two weeks.This study was the first study to use mobile APP for nutrition evaluation and consultation. We successfully used the system to improve dietary habits of the subjects, and encouraged the subjects to increase their vegetable and fruit intake,decrease fat and refine sugar consumption in order to lower their risk of chronic disease.
